3 pounds summer squash and/or zucchini, grated kosher salt, to taste 2 tablespoons extra-virgin olive oil 4 scallions, thinly sliced, white and green parts separated 1 jalapeño pepper, seeded and minced 3 tablespoons fresh parsley, chopped 1/4 teaspoon nutmeg, freshly grated freshly ground pepper, to taste 1 tablespoon unsalted butter 6 large eggs 1/2 cup Pepper Jack or sharp white cheddar cheese, grated
Directions
Step 1 -In a bowl, toss the squash with the salt and let drain in the sink, about 30-40 minutes.
Step 2 -Squeeze the squash to remove as much moisture and liquid as possible.
Step 3 -Preheat the oven to 375 degrees F.
Step 4 -Heat the olive oil in a large ovenproof skillet over medium-high heat.
Step 5 -Set aside 3 tablespoons of the scallion greens and add the remaining scallions (both white and green parts), the jalapeño, and the salt to the hot oil.
