Hard Tack Candy 2 cups granulated sugar 3/4 cup clear Karo syrup 1 cup cold water food coloring candy oil powdered sugar In a large, heavy saucepan put sugar, pour Karo over it and add water. Stir. Using a candy thermometer, heat to 275 degrees F. Add food coloring to make the color you want the batch to be. At 300 degrees F., add the flavor of candy oil you want. Stir well. Pour into a well-buttered dish. Keeping your fingers and your scissors well-buttered, begin at the edge to pull it toward you, cutting pieces and dropping them into a bowl or pan of powdered sugar. Store in an airtight container.
NOTE: When using stronger candy oil flavors like cinnamon, cloves, the mints, don't breathe the steam. Also, keeping your fingers and scissors well-buttered will help prevent the hot candy sticking to you.
This is the recipe my mother and I used, and now my daughters and I. The candy is hot when you are working with it. A lot of people pour it in a well-buttered cookie sheet and crack it when it's set. We use scissors to pull the candy toward us and cut into nice pieces.
