Killer BLT
Ingredients
12 slices bacon 1/2 cup mayonnaise 2 tablespoons sour cream 2 teaspoons yellow mustard butter, to taste 8 slices bread, sliced 1/2-inch-thick 4 green lettuce leaves, rinsed and dried 2 large ripe tomatoes, thickly sliced 1 large avocado or 2 small avocados, diced salt, to taste black pepper, to taste
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line an 18x26-inch baking sheet with aluminum foil.
Step 3 -In a single layer, add the bacon slices to the prepared baking sheet and bake until they are browned and crisp, about 18-20 minutes.
Step 4 -Place the baked bacon on a paper-towel-lined plate to drain and cool.
Step 5 -In a medium bowl, add the mayonnaise, the sour cream, and the yellow mustard and stir to combine. Set it aside.
Step 6 -Heat a large griddle or skillet over medium-high heat.
Step 7 -Use the butter to lightly coat both sides of each of the bread slices.
Step 8 -Place the butter-coated slices on the hot griddle and toast until both sides of all the slices are just golden-brown.
Step 9 -Transfer the toasted bread slices to a cutting board and evenly spread 1 tablespoon of the sauce mixture on each piece of the toast.
Step 10 -On 4 of the sauce-covered slices, add an even layer of the lettuce, the tomato, the bacon, and the avocado. Season with the salt and the pepper.
Step 11 -Top with the remaining sauce-covered slices of bread.
Step 12 -Serve.

Ingredients
1 pound lean ground beef 1 pound pork sausage 1 cup pepperoni, chopped 1/4 cup all-purpose flour 4 teaspoons Italian seasoning, divided 1 (26-ounce) jar tomato-basil pasta sauce 2 cups mozzarella cheese, shredded 1 (13.8-ounce) can refrigerated pizza crust dough 1 tablespoon olive oil 3 tablespoons parmesan cheese, grated
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Lightly coat a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -In a large skillet over medium-high heat, add the ground beef and the pork sausage and cook, while crumbling, until the meat mixture is no longer pink, about 5-7 minutes. Drain the excess grease from the skillet.
Step 4 -Add the pepperoni, the flour, and 3 teaspoons of the Italian seasonings to the meat mixture and stir until combined.

Grilled Cheese roll ups
Ingredients
8 thick slices soft white bread, crusts removed 1 1/2 cups cheddar, finely grated 2 tablespoons butter, plus more as needed, melted
Directions
Step 1 -Use a rolling pin to flatten the bread slices.
Step 2 -Add an even amount of the cheese onto each flattened slice, leaving a small strip at the end to brush with the butter.
Step 3 -Tightly but carefully roll-up each slice to the empty strip of space on the bread.
Step 4 -Brush the empty strips with the butter and roll the slices shut.
Step 5 -Brush the rolls all over with the butter.
Step 6 -Add the rolls to a dry pan, seam-side down, over medium-low heat.
Step 7 -Grill the rolls, frequently turning them with tongs, until they are golden all over and the cheese starts to leak out, about 3-4 minutes.
Step 8 -Serve hot.

Alabama Chicken sandwhiches
Ingredients
8 cups rotisserie chicken, cooked, shredded 1 cup Alabama white barbeque sauce 8 hamburger buns butter, to taste 32 dill pickle slices
Directions
Step 1 -In a medium bowl, add the shredded chicken and the white barbeque sauce and toss to fully coat the chicken.
Step 2 -Toast the hamburger buns in a skillet until they are golden-brown and then coat each side with the butter.
Step 3 -Add 1 cup of the chicken mixture to the bottom buns and then top with 4 of the dill pickle slices and the remaining top buns.
Step 4 -Serve.

Supreme Grilled Cheese
Ingredients
1/2 tablespoon unsalted butter, plus more, to taste 1 large egg salt, to taste pepper, to taste 2 slices white bread 1/4 cup sharp cheddar cheese, shredded 3 slices bacon, cut in half and cooked 1/2 avocado, sliced 1 slice Muenster or Swiss cheese
Directions
Step 1 -In a small skillet over medium heat, melt 1/2 tablespoon of the butter.
Step 2 -Add the egg, the salt, and the pepper to the melted butter and cook, about 2 minutes.
Step 3 -Flip the egg and cook, about 45 seconds. Transfer the egg to a plate.
Step 4 -Spread the extra butter on 1 side of each of the bread slices.
Step 5 -In the same skillet over medium heat, place 1 of the bread slices, buttered-side down, and top with 1/2 of the cheddar cheese, the cooked bacon, the remaining cheddar cheese, the cooked egg, the avocado, the Muenster cheese slice, and the remaining bread slice, buttered-side up.
Step 6 -Cook the sandwich for about 5 minutes, then gently flatten it with a spatula.
Step 7 -Carefully flip the sandwich and cook until it is toasted and melty, about 3-4 minutes.
Step 8 -Slice and serve.

Step 1 -In a bowl, add 4 tablespoons of the butter, 2 tablespoons of the parsley, 2 tablespoons of the scallions, and 2 tablespoons of the chives and mash to combine.
Step 2 -Spread 1/2 of the herb-butter mixture on 4 slices of the bread.
Step 3 -Add 1 slice of the Irish cheddar cheese and 3 slices of the pickles to the buttered-side of each of the bread slices.
Step 4 -Cover the cheese and the pickles with the remaining bread slices, closing the sandwiches.
Step 5 -Spread the extra plain butter on the outsides of the sandwiches.
Step 6 -Preheat a large skillet over medium heat.
Step 7 -Place the sandwiches in the skillet and fry until golden, about 3-4 minutes per side.
Step 8 -Spread the remaining herb-butter mixture on the hot sandwiches.
Step 9 -Slice the sandwiches into quarters.
Step 10 -Press the cut-sides of the sandwiches in the extra parsley, the extra scallions, and the extra chives.
Step 11 -Serve.

Ingredients
8 eggs, hard-boiled and peeled, coarsely chopped 1/2 stalk celery, finely chopped 1/4 cup mayonnaise 2 tablespoons chives, finely sliced 2 teaspoons fresh lemon juice 2 teaspoons whole-grain mustard kosher salt, to taste freshly ground black pepper, to taste paprika, optional, to taste, for serving crackers, optional, to taste, for serving
