Simple Stir Fry Shrimp
Ingredients
1 pound large shrimp, peeled and deveined 2 cups cold water kosher salt, to taste 2/3 cup chicken stock or low-sodium chicken broth 2 tablespoons Shaoxing wine or dry sherry 1 tablespoon soy sauce 1 tablespoon cornstarch 2 teaspoons sugar freshly ground black pepper, to taste 1/4 teaspoon crushed red pepper flakes, optional 3 tablespoons vegetable oil 3 cloves garlic, minced 1 teaspoon fresh ginger, finely grated 1 scallion, chopped, white and green parts separated 6 ounces snow peas, strings removed (if necessary) 2 ounces red bell pepper, thinly sliced 4 cups rice, cooked, for serving
Directions
Step 1 -In a medium bowl, add the shrimp with the water and a generous amount of the salt, stirring to combine.
Step 2 -Let the shrimp sit for 5 minutes.
Step 3 -Drain and rinse the shrimp under cold running water.
Step 4 -Pat the shrimp dry.
Step 5 -Combine the chicken stock, the wine, the soy sauce, the cornstarch, the sugar, the salt, the black pepper, and the crushed red pepper in a medium bowl.
Step 6 -Stir the chicken stock mixture until the cornstarch is fully incorporated and the mixture is smooth.
Step 7 -Heat a wok or a large, nonstick skillet over high heat for 2 minutes.
Step 8 -Add the oil to the wok, swirling it to coat.
Step 9 -Carefully add the shrimp to the oil in a single layer.
Step 10 -Allow the shrimp to cook for 2 minutes, stirring frequently.
Step 11 -Add the garlic, the ginger, and the scallion whites to the shrimp mixture and cook until fragrant, about 1 minute.
Step 12 -Add the snow peas and the bell pepper to the shrimp mixture and cook for 1 minute.
Step 13 -Add the sauce mixture and the scallion greens to the shrimp mixture and cook until the sauce has thickened, about 15 seconds.
Step 14 -Immediately serve the stir-fry over the rice.

Killer Shrimp
Ingredients
1 tablespoon fresh or dried rosemary 2 teaspoons thyme 1/2 teaspoon fennel seed 4 ounces butter 3 ounces tomato paste 1 teaspoon celery seed 2 cloves garlic, peeled and chopped 1 teaspoon crushed red pepper flakes 2 quarts clam broth 2 pounds shrimp, raw, peeled, deveined
Directions
Step 1 -Add the rosemary, the thyme, and the fennel seed to a mortar bowl and use the pestle to break them up until they are partially ground, but still recognizable.
Step 2 -Melt the butter in a large stockpot over low heat.
Step 3 -Add the tomato paste to the butter and cook until it loosens.
Step 4 -Add the spice mixture, the celery seed, the garlic, the crushed red pepper flakes, and the clam broth to the tomato paste mixture and cook, about 1 hour.
Step 5 -Add the shrimp to the broth mixture and simmer, stirring regularly, until they are plump and cooked through, about 2 minutes.
Step 6 -Serve the shrimp in bowls with enough of the broth to completely cover them.

Oven Baked Salmon
Ingredients
1 (2-pound) whole salmon, skin-on preferred 3 tablespoons butter, melted or olive oil 2 cloves garlic, minced 1 tablespoon brown sugar 1 teaspoon Italian seasoning 1 teaspoon ground paprika 1 teaspoon garlic powder 3/4 teaspoon salt
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Line a rimmed baking sheet with foil.
Step 3 -Place the salmon, skin side down, pink side up, on the prepared baking sheet.
Step 4 -Crimp the edges of the foil around the salmon to make what appears like a boat to catch the juices when baking.
Step 5 -In a small bowl, combine the melted butter and the minced garlic.
Step 6 -Brush 1/2 of the garlic butter over the salmon.
Step 7 -In another small bowl, combine the brown sugar, Italian seasoning, paprika, garlic powder, and salt.
Step 8 -Evenly sprinkle the spice mixture over the salmon.
Step 9 -Drizzle the coated salmon with the remaining garlic butter.
Step 10 -Bake the coated salmon until it reaches your preferred doneness, between 125-145 degrees F, about 15-22 minutes. If desired, carefully baste the salmon with the juices halfway through baking.
Step 11 -Allow the cooked salmon to rest for 5 minutes after baking.
Step 12 -Serve.

1930 Tuna Noodle Casserole
Ingredients
1 (10.75-ounce) can condensed reduced-fat and reduced-sodium cream of celery soup, undiluted 1/2 cup fat-free milk 2 cups yolk-free noodles, cooked 1 cup frozen peas, thawed 1 (5-ounce) can light water-packed tuna, drained and flaked 1 (2-ounce) jar diced pimientos, drained 2 tablespoons dry breadcrumbs 1 tablespoon butter, melted
Directions
Step 1 -Preheat oven to 400 degrees F.
Step 2 -Coat a 1 1/2-quart baking dish with cooking spray.
Step 3 -In a large bowl, combine the cream of celery soup and the milk until the mixture is smooth.
Step 4 -Add the noodles, the peas, the tuna, and the pimientos to the soup mixture and mix well.
Step 5 -Pour the tuna mixture into the prepared baking dish and bake, uncovered, for 25 minutes.
Step 6 -Toss the breadcrumbs and the butter together in a small bowl.
Step 7 -Carefully transfer the dish from the oven, sprinkle it with the breadcrumb mixture, and bake until the top is golden-brown, about 5 minutes.
Step 8 -Serve.

Best ever Baked Salmon
Ingredients
1/3 cup whole-grain mustard 1/4 cup honey 4 cloves garlic, minced 2 tablespoons fresh lemon juice 1/4 teaspoon smoked paprika 1/4 teaspoon kosher salt 1/8 teaspoon black pepper 1 (2-pound) salmon fillet, boneless and skinless 1 tablespoon fresh parsley, chopped, for garnish
Directions
Step 1 -In a small bowl, add the mustard, the honey, the garlic, the lemon juice, the paprika, the salt, and the black pepper and whisk to combine.
Step 2 -Preheat the oven to 375 degrees F.
Step 3 -Line a large baking sheet with a sheet of aluminum foil.
Step 4 -Coat the foil with cooking spray.
Step 5 -Lay the salmon on the prepared foil.
Step 6 -Spoon the honey-mustard sauce over the top of the salmon and spread it around evenly so it covers the entire top of the salmon.
Step 7 -Fold the sides of the foil up and over the top of the salmon so it is completely enclosed.
Step 8 -Bake until the salmon is almost cooked through, about 13-15 minutes.
Step 9 -Carefully open and pull back the aluminum foil so the top of the salmon is exposed.
Step 10 -Switch the oven to broil and broil the salmon until it reaches an internal temperature of 145 degrees F, about 2-3 minutes. Watch the salmon carefully to ensure the sauce does not burn.
Step 11 -Serve the salmon garnished with the parsley.
