Drunken Steak Tips
Ingredients
1/3 cup honey 1/4 cup light brown sugar, packed 1/3 cup bourbon 1/4 cup soy sauce 1/4 cup Worcestershire sauce 1/2 teaspoon red pepper flakes 2 cloves garlic, minced 2 pounds ribeye, sirloin, or filet steak, cut into 1-inch pieces 2 tablespoons vegetable oil 3 tablespoons butter, divided 1 (6-ounce) package mushrooms, cut in quarters
Directions
Step 1 -In a medium bowl, add the honey, the brown sugar, the bourbon, the soy sauce, the Worcestershire sauce, the red pepper flakes, and the garlic and whisk until combined.
Step 2 -Pour the marinade into a large resealable plastic bag, add the steak pieces, seal the bag, and gently toss to combine.
Step 3 -Place the bag on a plate and let the steak marinate in the refrigerator, about 2-4 hours.
Step 4 -In a cast-iron skillet over medium-high heat, heat the vegetable oil and 2 tablespoons of the butter.
Step 5 -In two batches, add the steak pieces to the skillet and cook until they are seared on all sides and reach an internal temperature of 135 degrees F, about 3-5 minutes per side.
Step 6 -Transfer the steak pieces to a large serving bowl.
Step 7 -In the same skillet, add the remaining butter and the mushrooms and cook until browned, about 3-5 minutes.
Step 8 -Add the mushrooms to the steak pieces and toss to combine.
Step 9 -Serve.

Lottery roast beef
Ingredients
1 (4-5-pound) beef tenderloin, trimmed and cut in half vertically 1 teaspoon salt 1/2 teaspoon black pepper 2 tablespoons olive oil 4 tablespoons salted butter, softened 2 teaspoons garlic, minced 1 teaspoon prepared horseradish or Dijon mustard 1 teaspoon rosemary or thyme, minced
Directions
Step 1 -Tuck the thinner end of each of the tenderloin halves under and use butcher's twine to truss each to create a more uniform size.
Step 2 -Season the tenderloin halves with the salt and the black pepper, then place them in the refrigerator, uncovered, to marinate, about 10 hours.
Step 3 -Transfer the marinaded tenderloin halves from the refrigerator and let them come to room temperature, about 2 hours.
Step 4 -Preheat the oven to 425 degrees F.
Step 5 -In a large cast-iron skillet over medium-high heat, add the olive oil.
Step 6 -Add the marinated tenderloin halves to the heated olive oil and sear them on all sides until they are golden-brown, about 3-5 minutes per side.
Step 7 -In a medium bowl, add the softened butter, the garlic, the horseradish, and the rosemary and stir to combine.
Step 8 -Spread the butter mixture over the outside of the tenderloin halves, then insert a meat thermometer into the center of each.
Step 9 -Place the cast-iron skillet in the oven and roast the tenderloins until they reach an internal temperature of 135 degrees F for medium-rare, about 20-25 minutes.
Step 10 -Place the roasted tenderloins directly onto a cutting board and let them rest to allow the juices to redistribute, about 15-20 minutes.
Step 11 -Remove the twine and cut the tenderloins into 1-inch slices.
Step 12 -Serve.

Grampas Skillet Pie
Ingredients
For the mashed potato topping: 2 pounds medium russet potatoes, peeled and quartered 1/4 cup unsalted butter 1/3 cup milk 1/2 cup cheddar cheese, shredded 1/2 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon ground black pepper parsley, chopped, optional, to taste, for garnish For the beef mixture: 2 tablespoons olive oil 1 large yellow onion, diced 3 medium carrots, diced 1 pound ground beef or ground lamb 1 tablespoon garlic, minced 1 tablespoon Worcestershire sauce 1 teaspoon Italian seasoning 1 teaspoon paprika 1/2 teaspoon salt 1/2 teaspoon ground black pepper 2 tablespoons all-purpose flour 1 cup peas, frozen 1 cup beef broth or water
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Add the potatoes to a large pot of salted water and bring to a boil over medium-high heat.
Step 3 - Cook the potatoes until fork tender, about 10-15 minutes.
Step 4 -Drain the potatoes.
Step 5 -Use a potato masher or a fork to mash the potatoes.
Step 6 -Add the butter, the milk, the cheddar cheese, the garlic powder, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper to the mashed potatoes and stir well.
Step 7 -While the potatoes are boiling, heat the olive oil in a large cast-iron skillet over medium-high heat until it sizzles, about 2 minutes.
Step 8 -Add the onion and the carrots to the skillet and sauté until fragrant and tender, about 2-3 minutes.
Step 9 -Add the ground beef to the onion mixture and cook, while crumbling the beef, until it is browned, about 5-7 minutes.
Step 10 -Add the garlic, the Worcestershire sauce, the Italian seasoning, the paprika, the remaining salt, and the remaining pepper to the ground beef mixture and stir until well-combined.
Step 11 -Add the flour to the ground beef mixture and stir well until fully-incorporated.
Step 12 -Add the peas and the beef broth to the ground beef mixture and simmer, stirring occasionally, until the sauce thickens, about 4 minutes.
Step 13 -Spread the ground beef mixture into an even layer in the skillet and place the skillet on a baking sheet.
Step 14 -Carefully spoon the mashed potatoes over the top of the ground beef mixture, spreading them out evenly.
Step 15 -Bake the skillet pie until the top turns golden-brown, about 25-30 minutes.
Step 16 -Allow the skillet pie to cool for 15 minutes.
Step 17 -Garnish with the parsley and serve.

Poor mans prime rib
Ingredients
1 (3-pound) eye of round roast beef 1 teaspoon garlic powder 1 teaspoon onion powder salt, to taste black pepper to taste
Directions
Step 1 -Preheat the oven to 500 degrees F.
Step 2 -In a large roasting pan or baking dish, add the roast beef and season it with the garlic powder, the onion powder, the salt, and the black pepper. Do not cover the roast.
Step 3 -Place the roast in the oven uncovered and reduce the heat to 475 degrees F.
Step 4 -Bake the roast beef for about 7 minutes per pound, about 21 minutes for a 3-pound roast.
Step 5 -Turn the oven off but do not open the door at all.
Step 6 -Let the roast sit in the off, closed oven until the meat reaches an internal temperature of 145 degrees F, about 2 hours 30 minutes. Again, do not open the oven door at any time during this process, even a little.
Step 7 -Transfer the roast from the oven to a cutting board with a sharp knife and carve it into thin slices.
Step 8 -Plate and serve.

Sloppy Joe Bake
1 1/2 pounds ground beef 1 (15.5-ounce) can sloppy joe sauce 2 cups cheddar cheese, shredded 2 cups biscuit/baking mix 2 large eggs, room temperature and lightly beaten 1 cup 2% milk 1 tablespoon sesame seeds
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Lightly grease a 13x9-inch baking dish.
Step 3 -In a large skillet over medium heat, cook and crumble the beef until no longer pink, about 5-7 minutes. Drain the excess grease.
Step 4 -Stir the sloppy joy sauce into the cooked beef.
Step 5 -Transfer the beef mixture to the prepared baking dish.
Step 6 -Sprinkle the beef mixture with the cheese.
Step 7 -In a large bowl, combine the biscuit mix, the eggs, and the milk until just blended.
Step 8 -Pour the biscuit batter over the cheese.
Step 9 -Sprinkle the biscuit batter with the sesame seeds.
Step 10 -Bake, uncovered, until the top is golden brown, about 25 minutes.
Step 11 -Serve.
