italy's best salad
Ingredients
For the salad: 2 avocados, diced 1 English cucumber, sliced 3 Roma tomatoes, diced 1/4 cup red onion, sliced 1/2 cup small mozzarella cheese balls For the dressing: 2 tablespoons olive oil 2 tablespoons lemon juice 1 tablespoon Italian seasoning salt, to taste pepper, to taste
Directions
Step 1 -In a large bowl, combine the avocados, the cucumber, the tomatoes, the red onion, and the mozzarella cheese balls and gently toss.
Step 2 -In a small bowl, whisk the olive oil, the lemon juice, and the Italian seasoning together.
Step 3 -Add the dressing to the salad and toss.
Step 4 -Season the salad with the salt and the pepper.
Step 5 -Serve.

German Cucumber salad
Ingredients
2 large cucumbers, thinly sliced 1/2 onion, optional, thinly sliced 1 teaspoon salt 1/2 cup sour cream 2 tablespoons white sugar 2 tablespoons white vinegar 1 teaspoon dried dill 1 teaspoon dried parsley 1 teaspoon paprika
Directions
Step 1 -On a platter, spread the cucumbers and onions.
Step 2 -Season the veggies with salt and let rest for 30 minutes.
Step 3 -Squeeze the excess moisture from the cucumbers away from the platter.
Step 4 -In a large bowl, stir the sour cream, sugar, vinegar, dill, and parsley together.
Step 5 -Fold the veggie mixture into the sour cream mixture.
Step 6 -Refrigerate the salad for at least 8 hours and up to overnight.
Step 7 -Garnish with paprika and serve.

George Clooney Salad
Ingredients
dressing of choice, to taste 1 crisp apple 1 shallot 8 cups baby arugula 1/4 cup pecans, roughly chopped 2 ounces soft goat cheese, crumbled sea salt, to taste
Directions
Step 1 -In a medium bowl, mix your dressing of choice according to the package directions. This is not necessary if you're using store bought, premade dressing.
Step 2 -Thinly slice the apple and the shallot.
Step 3 -Place the arugula on a plate and top with the sliced shallot, the sliced apple, the pecans, and the goat cheese.
Step 4 -Drizzle with the dressing and top with the sea salt.
Step 5 -Serve.

Ingredients
1 (7-ounce) package spaghetti 1 pound ground beef 1 small onion, chopped 1 (14.5-ounce) can kidney beans, rinsed and drained 1 (14.5-ounce) can no-salt-added diced tomatoes, undrained 1 (4-ounce) can mushroom stems and pieces, drained 1/3 cup water 1 (1-ounce) envelope chili seasoning 2 tablespoons parmesan cheese, grated 1/4 cup part-skim mozzarella cheese, shredded
Directions
Step 1 -Cook the spaghetti to al dente according to the package directions.
Step 2 -In a large skillet, cook the beef and the onion over medium heat, crumbling the beef as you go, until the meat is no longer pink, about 5-7 minutes. Drain the fat from the skillet.
Step 3 -Drain the spaghetti and add it to the beef mixture.
Step 4 -Stir in the beans, the tomatoes, the mushrooms, the water, the chili seasoning, and the parmesan cheese.
Step 5 -Cover and simmer for 10 minutes.
Step 6 -Sprinkle with the mozzarella cheese.
Step 7 -Serve.

EZ Stroganoff
Ingredients
1 1/2 pounds ground beef 1/2 cup onion, chopped garlic salt, to taste 2 tablespoons all-purpose flour 1 cup water or beef broth 1 (10.75-ounce) can condensed cream of mushroom soup, undiluted 1 (4.5-ounce) can mushrooms, drained 1 cup sour cream salt, to taste pepper, to taste fresh parsley, to taste, chopped, for garnish rice or noodles, to taste, cooked and warm, for serving
Directions
Step 1 -Heat a large skillet over medium heat.
Step 2 -Add the ground beef to the skillet and cook, while crumbling, until no longer pink, about 5-7 minutes. Drain any excess liquid from the skillet.
Step 3 -Add the onion and the garlic salt to the beef and cook until the onion is soft.
Step 4 -Add the flour to the beef mixture and cook, stirring regularly, about 2-3 minutes.
Step 5 -Add the water, the cream of mushroom soup, and the mushrooms to the beef mixture and bring to a simmer.
Step 6 -Reduce the heat and cook the beef mixture, stirring occasionally, about 8-10 minutes.
Step 7 -Gently fold the sour cream into the beef mixture and heat until warm.
Step 8 -Add the salt and the pepper to the beef mixture.
Step 9 -Sprinkle the top of the beef mixture with the parsley.
Step 10 -Serve the stroganoff over the rice or the noodles.
